Vegetable Tortellini Soup
Servings: 6
Ingredients
- 2 tbsp Extra virgin olive oil
- 1 Onion (Chopped)
- 2 Carrot (Chopped)
- 2 Zucchini (Chopped)
- 2 cup Green beans (cut)
- 1 tsp Salt
- 1/2 tsp Onion powder
- 1/2 tsp Garlic powder
- 1/2 tsp Dried basil
- 1/2 tsp Dried thyme
- 1/2 tsp Oregano
- 32 oz Chicken broth (we love kettle and fire)
- 28 oz San marzano tomatoes
- 9 oz La pasta tortellini
Instructions
- In a large pan or Dutch oven over medium heat pour in the EVOO. Add in the vegetables until al dente.
- Add in the seasonings and stir. Pour in the chicken broth and tomatoes. Bring to a boil and let simmer 45-50 minutes.
- Add in the tortellini and cook about 5-10 minutes until done.
- Serve immediately. We love serving with parmesan cheese on the top.
Notes
REHEAT/COOK IF FROZEN
- Thaw in fridge the night before using. They day of bring to a low boil in a saucepan and add in the tortellini until it is cooked through and comes to the top- about 5 minutes
