Warm Kale and Sweet Potato Winter Salad

Ingredients
Salad Dressing Ingredients
- 2 tbsp Red onion (finely minced)
- 2 clove Garlic (finely chopped)
- 1/2 cup Orange juice (freshly pressed is best)
- 3 tbsp Olive oil
- 1/2 tsp Salt and pepper (each)
- 2 tbsp Honey
- 2 tsp Dijon mustard
Salad Ingredients
- 1/2 lb Ground pork sausage (any flavor you like, I used spicy)
- 3 Sweet potato (medium sized, peeled, diced in small cubes )
- 2 tbsp Olive oil
- 1/2 tsp Salt and pepper (each)
- 1/2 cup Walnuts
- 12 oz Kale (chopped)
- 4 oz Goat cheese (plain)
- 1/2 cup Green onion (chopped )
- 1/2 cup Dried cranberries
Instructions
Salad Directions
- Preheat oven to 375. Add chopped sweet potatoes to a pan and toss with olive oil, salt & pepper. Roast for 25-30 minutes until tender and golden. Stir half way through. If frozen, you might need to add 10 minutes or so.
- Once done, pull the pan out and add the chopped kale and walnuts to the pan. Toss and place back in the oven for 10 more minutes.
- Remove from oven and allow to cool for 10 minutes.
Salad Dressing Directions
- To prep dressing or to make day of, grab a mason jar. Add in diced onion, garlic, orange juice, olive oil, salt & pepper, honey, and dijon. Shake well! Store in fridge til needed. *Dressing does taste better if you make in advance and flavors can marry but its still delicious if made the day of!
Finish Salad
- To finish salad, grab a bowl and add in mixture from the pan. Toss in cranberries, green onion, and goat cheese. Goat cheese can be sliced or just broken apart.
- Toss on about half the dressing and start from there. Toss and taste! I stopped there and thought it was good but you can always add more if needed! Enjoy!
Notes
Sausage
- You can leave out sausage and add in white beans to make it vegetarian. Or swap the pork sausage with chicken to make it a tad lighter.
Olive Oil
- I love using olive oil as its the best kind. But you can use any other you have on hand.
Red/Green Onion
- There are two different types of raw onion in here. I love how it lifts the salad and brightens it. You can remove or just add one if that's too much. It will still be amazing!
