Zucchini Bread

Ingredients

  • 3 cup Einkorn flour
  • 1 tsp Pink himalayan salt
  • 2 tsp Baking powder
  • 1 tsp Baking soda
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 3 cup Zucchini (shredded)
  • 2 Egg
  • 1/2 cup Butter (melted)
  • 1 cup Maple syrup

Instructions

  • Preheat oven to 350f. 
  • Cutout parchment paper to fit a bread loaf pan.  Coat with oil. 
  • In a bowl combine the 3 cup einkorn flour,1 tsp. salt, 2 tsp. baking powder, 1 tsp. baking soda, 1 tsp. cinnamon and nutmeg.
  • In another bowl combine the 3 cups of zucchini shredded, 2 egg, 1/2 cup butter and 1 cup maple syrup. 
  • Slowly add in the flour mixture to the wet ingredient bowl. 
  • Pour into the pan and bake for 60-65 minutes until a toothpick comes out of the middle clean. 
  • Let cool and serve

Notes

Freezer Instructions
  • To freeze, let come to room temperature. Wrap in parchment paper and then foil and freeze in the freezer up to 2 months.
