Zucchini Bread
Servings: 10
Ingredients
- 3 cup Einkorn flour
- 1 tsp Pink himalayan salt
- 2 tsp Baking powder
- 1 tsp Baking soda
- 1 tsp Cinnamon
- 1/2 tsp Nutmeg
- 3 cup Zucchini (shredded)
- 2 Egg
- 1/2 cup Butter (melted)
- 1 cup Maple syrup
Instructions
- Preheat oven to 350f.
- Cutout parchment paper to fit a bread loaf pan. Coat with oil.
- In a bowl combine the 3 cup einkorn flour,1 tsp. salt, 2 tsp. baking powder, 1 tsp. baking soda, 1 tsp. cinnamon and nutmeg.
- In another bowl combine the 3 cups of zucchini shredded, 2 egg, 1/2 cup butter and 1 cup maple syrup.
- Slowly add in the flour mixture to the wet ingredient bowl.
- Pour into the pan and bake for 60-65 minutes until a toothpick comes out of the middle clean.
- Let cool and serve
Notes
Freezer Instructions
- To freeze, let come to room temperature. Wrap in parchment paper and then foil and freeze in the freezer up to 2 months.
