In a small bowl, whisk together 1 Egg, 11/2 tbsp Extra virgin olive oiland 2 tsp All purpose seasoning.
In another bowl whisk together 1/2 cup Arrowroot and 1/4 cup Einkorn flour.
Toss the2 Organic chicken breast cubed into the egg mixture and coat well.
Heat a medium cast iron skillet over medium/high heat.
Pour in extra virgin olive oil (enough to coat the bottom).
Once the oil is hot, add in the chicken being sure it is a single layer.
After about 3 minutes flip and do this until chicken is cooked through.
