Zucchini Pancakes

Zucchini
(shredded and water squeezed out)

Pink himalayan salt

Einkorn flour

Egg

Gruyere
(shredded from a block)

cup
Green onions

Garlic
(Pressed)

Instructions
In a strainer place the salt and zucchini and let sit 30 minutes.
Mix everything in a bowl until completely combined.
Heat a cast iron to medium/high with oil.
Place a large scoop into the pan and press flat like a pancake.
Let brown and flip.
Let the second side crisp up and flip.
Remove and do this until all of the mixture is gone.
