In a small bowl, whisk together 2 cups rolled oats, 1/3 cup einkorn flour, 1 tsp baking powder, 2 tsp pumpkin pie spice and 1/2 tsp salt.
In a medium bowl whisk together 1 1/4 cups whole milk, 1/2 cup unsweetened applesauce, 2 eggs, 1/3 cup pure maple syrup, 2 tsp pure vanilla extract.
In a small bowl, mix together 2 medium apples peeled and chopped into small cubs and ½ lemon squeezed for juice, 1 tbsp maple syrup and ½ tsp cinnamon.
Add the dry ingredients to the wet ingredients and use a spatula to mix until combined.
Mix in the apples (with lemon juice, maple syrup and cinnamon) until combined.
Pour into an 8x8 dish lined with parchment paper and bake for 40-45 minutes at 350℉ until cooked through.
Let cool and serve.
