Apple Spice Oatmeal Bake

Equipment

  • 1 apple peeler

Ingredients

  • 2 cups rolled oats
  • 1/3 cup einkorn flour
  • 1 tsp baking powder
  • 2 tsp pumpkin pie spice
  • 1/2 tsp salt
  • Wet:
  • 1 1/4 cups whole milk
  • 1/2 cup unsweetened applesauce
  • 2 eggs
  • 1/3 cup pure maple syrup
  • 2 tsp pure vanilla extract
  • Mix-in:
  • 2 medium apples diced small
  • ½ lemon squeezed
  • 1 tbsp maple syrup
  • ½ tsp cinnamon

Instructions

  • In a small bowl, whisk together 2 cups rolled oats, 1/3 cup einkorn flour, 1 tsp baking powder, 2 tsp pumpkin pie spice and 1/2 tsp salt.
  • In a medium bowl whisk together 1 1/4 cups whole milk, 1/2 cup unsweetened applesauce, 2 eggs, 1/3 cup pure maple syrup, 2 tsp pure vanilla extract.
  • In a small bowl, mix together 2 medium apples peeled and chopped into small cubs and ½ lemon squeezed for juice, 1 tbsp maple syrup and ½ tsp cinnamon.
  • Add the dry ingredients to the wet ingredients and use a spatula to mix until combined.
  • Mix in the apples (with lemon juice, maple syrup and cinnamon) until combined.
  • Pour into an 8x8 dish lined with parchment paper and bake for 40-45 minutes at 350℉ until cooked through.
  • Let cool and serve.
