- 1 apple peeler
Ingredients
- 2 cups rolled oats
- 1/3 cup einkorn flour
- 1 tsp baking powder
- 2 tsp pumpkin pie spice
- 1/2 tsp salt
- Wet:
- 1 1/4 cups whole milk
- 1/2 cup unsweetened applesauce
- 2 eggs
- 1/3 cup pure maple syrup
- 2 tsp pure vanilla extract
- Mix-in:
- 2 medium apples diced small
- ½ lemon squeezed
- 1 tbsp maple syrup
- ½ tsp cinnamon
Instructions
- In a small bowl, whisk together 2 cups rolled oats, 1/3 cup einkorn flour, 1 tsp baking powder, 2 tsp pumpkin pie spice and 1/2 tsp salt.
- In a medium bowl whisk together 1 1/4 cups whole milk, 1/2 cup unsweetened applesauce, 2 eggs, 1/3 cup pure maple syrup, 2 tsp pure vanilla extract.
- In a small bowl, mix together 2 medium apples peeled and chopped into small cubs and ½ lemon squeezed for juice, 1 tbsp maple syrup and ½ tsp cinnamon.
- Add the dry ingredients to the wet ingredients and use a spatula to mix until combined.
- Mix in the apples (with lemon juice, maple syrup and cinnamon) until combined.
- Pour into an 8x8 dish lined with parchment paper and bake for 40-45 minutes at 350℉ until cooked through.
- Let cool and serve.

- Freezer: Wrap each square in parchment and freeze in a Stasher bag for up to 2 months.
- Reheat: Microwave for 30–45 seconds with a splash of milk to soften.
