Preheat oven to 350℉.
Spray a 9 x 5 pan with oil and line the bottom with parchment paper.
Mix 2 ½ cups all purpose Jovial einkorn flour, 1 tsp pink Himalayan salt, 1 tsp baking powder, 1 tsp baking soda, and ½ tsp cinnamon in a large bowl.
In another bowl mash 3 of the 4 overripe bananas, and add 2 eggs, ½ cup butter¾ cup maple syrup, and ¾ cup maple syrup then mix well.
Pour the dry ingredients into the wet ingredients and beat with a medium mixer for 2 minutes.
Pour into the prepared pan.
Cut the remaining banana on a plane so you have 2 long strips. Place on the top of the mixture.
Bake for 50 minutes at 350 ℉for 1 hour depending on your oven. It is done when a toothpick inserted in the middle comes out clean.
