Ingredients

  • 2 1/2 cup All purpose jovial einkorn flour
  • 1 tsp Pink himalayan salt
  • 1 tsp Baking powder
  • 1 tsp Baking soda
  • 1/2 tsp Cinnamon
  • 4 Overripe bananas (save 1 for the top only use 3 in the recipe)
  • 2 Egg
  • 1/2 cup Butter (melted)
  • 3/4 cup Maple syrup

Instructions

  • Preheat oven to 350f. 
  • Spray a 9x5 pan with oil and line the bottom with parchment paper. 
  • Mix dry ingredients in a large bowl. 
  • In another bowl mash 3 bananas, then pour in the eggs, butter and maple syrup and combine. 
  • Pour the dry ingredients into the wet ingredients and beat with a medium mixer for 2 minutes. 
  • Pour into the prepared pan
  • Cut the remaining banana on a plane so you have 2 long strips. Place on the top of the mixture
  • Bake for 50 minutes- 1 hour depending on your oven.  It is done when a toothpick inserted in the middle comes out clean. 

Notes

Freezer Instructions
  • Once the banana bread is cooled to room temperature wrap in parchment paper and then foil or saran wrap. Freeze up to 2 months. You can also freeze by the slice.
