Ingredients

  • 2 ½ cups all purpose Jovial einkorn flour
  • 1 tsp pink Himalayan salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp cinnamon
  • 4 overripe bananas (save 1 for the top only use 3 in the recipe)
  • 2 eggs
  • ½ cup butter (melted)
  • ¾ cup maple syrup

Instructions

  • Preheat oven to 350℉.
  • Spray a 9 x 5 pan with oil and line the bottom with parchment paper. 
  • Mix 2 ½ cups all purpose Jovial einkorn flour, 1 tsp pink Himalayan salt, 1 tsp baking powder, 1 tsp baking soda, and ½ tsp cinnamon in a large bowl. 
  • In another bowl mash 3 of the 4 overripe bananas, and add 2 eggs, ½ cup butter¾ cup maple syrup, and ¾ cup maple syrup then mix well. 
  • Pour the dry ingredients into the wet ingredients and beat with a medium mixer for 2 minutes. 
  • Pour into the prepared pan.
  • Cut the remaining banana on a plane so you have 2 long strips. Place on the top of the mixture.
  • Bake for 50 minutes at 350 ℉for 1 hour depending on your oven.  It is done when a toothpick inserted in the middle comes out clean. 

Notes

Freezer Instructions
  • Once the banana bread is cooled to room temperature wrap in parchment paper and then foil or saran wrap. Freeze up to 2 months. You can also freeze by the slice.
