Beef Enchilada Dip

Equipment

  • 1 cast iron skillet
  • 1 cheese grater

Ingredients

  • 1 lb ground beef
  • 1 tsp pink Himalayan salt
  • 1 cup enchilada sauce  (see component recipe)
  • 4 oz chiles
  • ½ sour cream
  • 4 oz cream cheese
  • 15 oz organic black beans
  • 2 cups Monterrey Jack cheese (shredded)
  • 2 cups sharp cheddar cheese (shredded)

Instructions

  • In a cast iron skillet over medium heat, sauté 1 lb ground beef with 1 tsp pink Himalayan salt.
  • Once cooked through, stir in 1 cup enchilada sauce , ½ sour cream, 4 oz chiles, 4 oz cream cheese, and 15 oz organic black beans. Mix thoroughly and sprinkle with 2 cups Monterrey Jack cheese and 2 cups sharp cheddar cheese, both shredded.
  • Place in an oven heated to 425℉. Bake 10 minutes until cheese bubbles. 

Notes

  • Instead of pink Himalayan salt, you can use sea salt or a salt of your choice.
