Boursin Tortilla Breakfast Rolls

Ingredients

  • 2 large tortillas
  • 5.4 oz Boursin chives and shallots
  • 1 tsp M salt
  • 2 organic eggs
  • 1 cup organic cottage cheese
  • 2 cup shredded organic sharp cheddar cheese
  • ½ lb uncured deli ham chopped

Instructions

  • Preheat oven to 375℉
  • In a bowl whisk together1 tsp M salt, 2 organic eggs, 1 cup organic cottage cheese.
  • Lay the 2 large tortillas flat and split the 5.4 oz Boursin chives and shallots in two. Spread half on one tortilla and half on the other creating a thin layer.
  • Split the cottage cheese and egg mixture in half. Spread half evenly on top of the Boursin on each tortilla. Sprinkle the ½ lb uncured deli ham chopped on top of each tortilla.
  • Roll tightly and slice into 6 pieces. Roll the second one tightly as well and slice into 6 pieces. Place the rolls into the muffin tins individually.
  • Sprinkle the 2 cup shredded organic sharp cheddar cheese on top evenly among all 12.
  • Bake for about 25 minutes until the egg is baked through.
