Boursin Tortilla Breakfast Rolls

If your mornings are anything like ours, you need something quick, satisfying, and easy to grab while getting everyone out the door. These Boursin Tortilla Breakfast Rolls are a total life saver for busy families-creamy, savory, and packed with protein to keep everyone full through school and work. The flavor of the Boursin cheese makes if feel fancy, but the prep couldn’t be easier. My kids love these warm from the oven, and reheat so easily for quick breakfasts.

- Boursin cheese
- M salt
- eggs
- organic cottage cheese
- organic sharp cheddar cheese
- uncured chopped ham
Boursin Tortilla Breakfast Rolls
Ingredients
- 2 large tortillas
- 5.4 oz Boursin chives and shallots
- 1 tsp M salt
- 2 organic eggs
- 1 cup organic cottage cheese
- 2 cup shredded organic sharp cheddar cheese
- ½ lb uncured deli ham chopped
Instructions
- Preheat oven to 375℉
- In a bowl whisk together1 tsp M salt, 2 organic eggs, 1 cup organic cottage cheese.
- Lay the 2 large tortillas flat and split the 5.4 oz Boursin chives and shallots in two. Spread half on one tortilla and half on the other creating a thin layer.
- Split the cottage cheese and egg mixture in half. Spread half evenly on top of the Boursin on each tortilla. Sprinkle the ½ lb uncured deli ham chopped on top of each tortilla.
- Roll tightly and slice into 6 pieces. Roll the second one tightly as well and slice into 6 pieces. Place the rolls into the muffin tins individually.
- Sprinkle the 2 cup shredded organic sharp cheddar cheese on top evenly among all 12.
- Bake for about 25 minutes until the egg is baked through.
Storage and Freezer Tips
Refrigerate: Store in an air tight container in the refrigerator.
Freeze: Place on a parchment lined baking and place in the freezer for 2 hours. Transfer to a freezer safe Ziploc and store up to 2 months.
Reheat: In the oven or air fryer at 375f for 7 minutes. Or in the microwave for 30 seconds
Substitutes and Variations
Swap the protein: Swap for bacon, ground sausage etc.
Veggies: Add in spinach, sauteed mushrooms or roasted red peppers
