6Flour tortilla
1lbBreakfast sausage
8Egg
2cupCheese(favorite cheese shredded off the block)
1/2cupSalsa

Instructions
In a skillet turn the heat to medium. Add in the breakfast sausage and break it up into little bits. Cook through.
Add in the eggs and using a spatula cook until the eggs are done. Place the mixture into bowl.
In the skillet coat with olive oil and add in the tortilla. Place some of the sausage mixture on one half and top with cheese.
Fold in half and flip over.
Once cooked through top with salsa and your other favorite toppings. Enjoy!
Notes
Reheat
There are 2 ways to reheat: Place on a parchment lined baking sheet and preheat the oven to 400. Spray olive oil on both sides and bake until cooked through and crispy. or You can also heat a skillet to medium and pour in extra virgin olive oil. Cook about 8 minutes on one side and 8 on the other. Be sure to cook through. You may need to flip more than once.
