Breakfast Quesadillas

Are you more of a savory breakfast person than sweet?  You have to try these breakfast quesadillas.  You can prep these ahead and freeze for mornings on the go.  We love that is gives you a savory flavor in the morning with a little kick.

Breakfast Quesadillas

Equipment

  • 1 cast iron skillet

Ingredients

  • 6 Flour tortilla
  • 1 lb Breakfast sausage
  • 8 Egg
  • 2 cup Cheese (favorite cheese shredded off the block)
  • 1/2 cup Salsa

Instructions

  • In a skillet turn the heat to medium. Add in the breakfast sausage and break it up into little bits. Cook through.
  • Add in the eggs and using a spatula cook until the eggs are done. Place the mixture into bowl.
  • In the skillet coat with olive oil and add in the tortilla. Place some of the sausage mixture on one half and top with cheese.
  • Fold in half and flip over.
  • Once cooked through top with salsa and your other favorite toppings. Enjoy!

Notes

Reheat
  • There are 2 ways to reheat:
    Place on a parchment lined baking sheet and preheat the oven to 400. Spray olive oil on both sides and bake until cooked through and crispy.
    or
    You can also heat a skillet to medium and pour in extra virgin olive oil. Cook about 8 minutes on one side and 8 on the other. Be sure to cook through. You may need to flip more than once.
