Line a baking sheet with parchment paper
Mix together the 1 lb Organic ground chicken with 1/2 tsp Pink himalayan salt, 1/4 tsp Black pepper, 1/4 tsp Ground mustard, 1/4 tsp Garlic powder.
Once thoroughly combined, roll into skinny logs.
Place on the parchment lined baking sheet and place in the freezer while putting together the remaining ingredients. About 20 minutes. This makes it easier to coat.
In 3 separate shallow dishes combine the flour coating ingredients in one bowl 1/3 cup Einkorn flour 1/4 tsp Pink himalayan salt, 1/4 tsp Smoked paprika, the egg coating ingredients 2 Egg 1/2 cup Milk and finally the bread crumb mixture in a bowl 1 1/4 cup Organic panko bread crumbs 1/2 tsp Pink himalayan salt1 tsp Onion powder 1 tsp Garlic powder, 1/4 tsp Mustard powder, 1/4 tsp Black pepper.
In this order, dunk each chicken log into the flour mixture, then egg mixture and finally panko crumbs.
Place on the parchment lined baking sheet and spray with either avocado or extra virgin olive oil.
Bake in the oven at 425f for 15 minutes.
