Chicken Fries
My kids LOVE chicken fries, but I cannot find a clean brand on the market so I headed to the kitchen and created my own. These are crispy on the outside, tender on the inside and loaded with flavor.

Chicken Fries

Equipment
- 1 sheet pan
- parchment paper
Ingredients
- 1 lb Organic ground chicken
- 1/2 tsp Pink himalayan salt
- 1/4 tsp Black pepper
- 1/4 tsp Ground mustard
- 1/4 tsp Garlic powder
Flour Coating
- 1/3 cup Einkorn flour (can use gluten free as well)
- 1/4 tsp Pink himalayan salt
- 1/4 tsp Smoked paprika
Egg Coating
- 2 Egg
- 1/2 cup Milk
Bread Crumb Coating
- 1 1/4 cup Organic panko bread crumbs (regular or gluten free)
- 1/2 tsp Pink himalayan salt
- 1 tsp Onion powder
- 1 tsp Garlic powder
- 1/4 tsp Mustard powder
- 1/4 tsp Black pepper
Instructions
- Line a baking sheet with parchment paper
- Mix together the 1 lb Organic ground chicken with 1/2 tsp Pink himalayan salt, 1/4 tsp Black pepper, 1/4 tsp Ground mustard, 1/4 tsp Garlic powder.
- Once thoroughly combined, roll into skinny logs.
- Place on the parchment lined baking sheet and place in the freezer while putting together the remaining ingredients. About 20 minutes. This makes it easier to coat.
- In 3 separate shallow dishes combine the flour coating ingredients in one bowl 1/3 cup Einkorn flour 1/4 tsp Pink himalayan salt, 1/4 tsp Smoked paprika, the egg coating ingredients 2 Egg 1/2 cup Milk and finally the bread crumb mixture in a bowl 1 1/4 cup Organic panko bread crumbs 1/2 tsp Pink himalayan salt1 tsp Onion powder 1 tsp Garlic powder, 1/4 tsp Mustard powder, 1/4 tsp Black pepper.
- In this order, dunk each chicken log into the flour mixture, then egg mixture and finally panko crumbs.
- Place on the parchment lined baking sheet and spray with either avocado or extra virgin olive oil.
- Bake in the oven at 425f for 15 minutes.

Allergens
- use gluten free swaps so make gluten free, naturally nut free
- swap 1/4 cup all purpose flour for 1/3 cup einkorn flour and swap sea salt for pink Himalayan salt
