Chicken Fries

My kids LOVE chicken fries, but I cannot find a clean brand on the market so I headed to the kitchen and created my own.  These are crispy on the outside, tender on the inside and loaded with flavor.

Equipment

  • 1 sheet pan
  • parchment paper

Ingredients

  • 1 lb Organic ground chicken
  • 1/2 tsp Pink himalayan salt
  • 1/4 tsp Black pepper
  • 1/4 tsp Ground mustard
  • 1/4 tsp Garlic powder

Flour Coating

  • 1/3 cup Einkorn flour  (can use gluten free as well)
  • 1/4  tsp Pink himalayan salt
  • 1/4 tsp Smoked paprika

Egg Coating

  • 2 Egg
  • 1/2 cup Milk

Bread Crumb Coating

  • 1 1/4 cup  Organic panko bread crumbs  (regular or gluten free)
  • 1/2 tsp Pink himalayan salt
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • 1/4 tsp Mustard powder
  • 1/4 tsp Black pepper

Instructions

  • Line a baking sheet with parchment paper
  • Mix together the 1 lb Organic ground chicken with 1/2 tsp Pink himalayan salt, 1/4 tsp Black pepper, 1/4 tsp Ground mustard, 1/4 tsp Garlic powder.
  • Once thoroughly combined, roll into skinny logs.
  • Place on the parchment lined baking sheet and place in the freezer while putting together the remaining ingredients. About 20 minutes. This makes it easier to coat.
  • In 3 separate shallow dishes combine the flour coating ingredients in one bowl 1/3 cup Einkorn flour  1/4  tsp Pink himalayan salt, 1/4 tsp Smoked paprika, the egg coating ingredients 2 Egg 1/2 cup Milk and finally the bread crumb mixture in a bowl 1 1/4 cup  Organic panko bread crumbs  1/2 tsp Pink himalayan salt1 tsp Onion powder 1 tsp Garlic powder, 1/4 tsp Mustard powder, 1/4 tsp Black pepper.
  • In this order, dunk each chicken log into the flour mixture, then egg mixture and finally panko crumbs.
  • Place on the parchment lined baking sheet and spray with either avocado or extra virgin olive oil.
  • Bake in the oven at 425f for 15 minutes.

  • use gluten free swaps so make gluten free, naturally nut free
Swaps
  • swap 1/4 cup all purpose flour for 1/3 cup einkorn flour and swap sea salt for pink Himalayan salt
