Classic White Bean Soup

Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 onion chopped
  • 2 organic celery ribs (chopped) washed
  • 2 organic carrots (chopped) washed
  • 3 potatoes (peeled and chopped) washed
  • 1 tsp pink Himalayan salt
  • ½ tsp black pepper
  • 1 tsp organic garlic powder
  • 1 tsp organic onion powder
  • 1 tsp Italian seasoning
  • 64 oz organic chicken broth
  • 30 oz cannellini beans
  • ½ cup organic heavy cream
  • 1 ham bone

Instructions

  • In a stock pot on a stove top over medium heat add in 2 tbsp extra virgin olive oil, 1 onion chopped, 2 organic celery ribs (chopped), 2 organic carrots (chopped), and 3 potatoes (peeled and chopped).
  • Sauté about 10 minutes until the onions are caramelized and the celery, carrots and potatoes are softened.
  • Sprinkle in 1 tsp pink Himalayan salt, ½ tsp black pepper, 1 tsp organic garlic powder, 1 tsp organic onion powder, and 1 tsp Italian seasoning.
  • Pour in 64 oz organic chicken broth and 30 oz cannellini beans add in ½ cup organic heavy cream and 1 ham bone. Place the lid on.
  • Bring to a low boil, reduce the heat to slow and let simmer 45 minutes.
  • Remove the ham bone and slice off the ham meat and chop.
  • Add the ham into the soup.
  • Stir well and serve.
