1 cookie scoop #30 or 3 tbsp/ muffin tin
Ingredients
extra virgin olive oilor avocado oil
7slices breadchopped into bits (I love Izzio)
4organic eggs
1cuporganic whole milk
1tbspwhite vinegar
2tsporganic cinnamon
½tspall-spice
¼cuporganic maple syrup
⅛tsppink Himalaya saltor sea salt
¼tspbaking soda
½tspbaking powder

Instructions
Preheat the oven to 350℉
Lightly grease the muffin tin using extra virgin olive oil
In a small bowl, combine 1 cup organic whole milk and 1 tbsp white vinegar. Whisk and let rest 5 minutes. This makes buttermilk, so you don't have to buy extra.
In a medium bowl, mix together 4 organic eggs, milk mixture, 2 tsp organic cinnamon, ½ tsp all-spice, ¼ cup organic maple syrup, ⅛ tsp pink Himalaya salt, ¼ tsp baking soda, ½ tsp baking powder.
Once combined, add in the 7 slices bread. Mix until all of the bread is coated. Let sit 10 minutes.
Use the #20 cookie scoop and scoop into 12 muffin tins. Try to make the liquid with the bread close to an even amount in each tin.
Back at 350℉ for 18-22 minutes.
Remove and let rest 10 minutes before serving. Serve with maple syrup.
Notes
To Freeze:Bring to room temperature. Place on a parchment lined baking sheet and freeze for 2 hours. Place in a freezer safe Ziploc bag and freeze for up to 2 months.
