- 4 organic eggs
- 1 cup organic whole milk
- 1 tbsp white vinegar
- 2 tsp organic cinnamon
- ½ tsp all-spice
- ¼ cup organic maple syrup
- ⅛ tsp pink Himalaya salt or sea salt
- ¼ tsp baking soda
- ½ tsp baking powder
Instructions
- Preheat the oven to 350℉
- Lightly grease the muffin tin using extra virgin olive oil
- In a small bowl, combine 1 cup organic whole milk and 1 tbsp white vinegar. Whisk and let rest 5 minutes. This makes buttermilk, so you don't have to buy extra.
- In a medium bowl, mix together 4 organic eggs, milk mixture, 2 tsp organic cinnamon, ½ tsp all-spice, ¼ cup organic maple syrup, ⅛ tsp pink Himalaya salt, ¼ tsp baking soda, ½ tsp baking powder.
- Once combined, add in the 7 slices bread. Mix until all of the bread is coated. Let sit 10 minutes.
- Use the #20 cookie scoop and scoop into 12 muffin tins. Try to make the liquid with the bread close to an even amount in each tin.
- Back at 350℉ for 18-22 minutes.
- Remove and let rest 10 minutes before serving. Serve with maple syrup.
