Easy Duchess Potatoes with Cheese and Bacon

- 4 cups traditional mashed potatoes
- 2 egg yolks
- 1/2 cup parmesan cheese
- 1/2 cup gruyere cheese
- 1 tablespoon melted butter
- 4 strips of bacon chopped

Preheat the oven to 400f.
Line a baking tray with parchment paper and get a large piping bag set with a large star tip.
If you don't have a pastry bag, using a large Ziploc and cutting off the corner will work.
Pull out your mashed potatoes and pop them in the microwave for a few seconds to get them to room temperature.
At this point cook the chopped bacon in a cast iron skillet to crisp up.
Mix in the egg yolks, and both of the cheeses to the mashed potatoes.
Once it is all stirred up pour the potatoes into the piping bag or ziploc and create little "Poofs" on the prepared baking sheet.
Melt the butter in a microwave safe dish and then baste the potatoes with the melted butter.
Sprinkle the tops with the crispy bacon.
Place potatoes into the high heat oven. Bake for 15-20 minutes until you get crispy edges. They will be done when the tops are golden brown.
