Easy Duchess Potatoes with Cheese and Bacon

This is one of my favorite things to make with leftover mashed potatoes.

If you are like us, more than likely you will have company for a few days after the holidays and these Easy Duchess Potatoes are a fun way to spice up the leftovers.  It is a way to make a side without a lot of effort and who doesn’t love a good potato recipe.

I like to add some extra cheese such as parmesan cheese or gruyere cheese and drizzle the tops with butter and a little bacon.  The bacon gives an extra crunch and the flavor is unreal!  This adds extra flavor compared to the traditional duchess potatoes.  Any type of traditional mashed potatoes will work- use your favorite recipe.  I do find russet potatoes hold up a bit better than Yukon gold potatoes, but it is a person preference so either will work. You can also top with fresh herbs- chives is a favorite in our house!

Ingredients:

  • 4 cups traditional mashed potatoes
  • 2 egg yolks
  • ​1/2 cup parmesan cheese
  • 1/2 cup gruyere cheese
  • 1 tablespoon melted butter
  • 4 strips of bacon chopped

Making the Easy Duchess Potatoes with Cheese and Bacon

To make the easy Duchess Potatoes Preheat the oven to 400f. Line a baking tray with parchment paper and get a large piping bag set with a large star tip.  If you don’t have a pastry bag, using a large Ziploc and cutting off the corner will work. Pull out your mashed potatoes and pop them in the microwave for a few seconds to get them to room temperature. This makes it so the eggs can mix in a you are able to squeeze the potatoes out of the piping bag. At this point cook the chopped bacon in a cast iron skillet to crisp up. Mix in the egg yolks, and both of the cheeses.  Once it is all stirred up pour the potatoes into the piping bag or ziploc and create little “Poofs” on the prepared baking sheet.  Melt the butter in a microwave safe dish and then baste the potatoes with the melted butter. Sprinkle the tops with the crispy bacon.  Place potatoes into the high heat oven. Bake for 15-20 minutes until you get crispy edges.  They will be done when the tops are golden brown.

Variations and Tips

There are a few tips- if you end up using a ziploc to push the potatoes out of, rough up the edges with a fork so that they get the nice crisp brown. You can also make these and then freeze them.  Place the puffs on a parchment lined baking and flash freezer for about 30 minutes.  After this place them in a ziploc or freezer safe bag to use for a special occasion. These are a really great way to use up leftovers and create an elegant side dish for when you need it.  The baking time can vary a bit based on how how your oven runs.  To get the nice crisp you might need to adjust it up to 425.
