Easy Sweet Potato Hash

- 2 TBSP. olive oil
- 6 sweet potatoes cubed
- 1 yellow onion sliced
- 1 tsp. salt
- 1 tsp. fresh thyme
- 3 garlic cloves chopped
- 2 TBSP. balsamic glaze
- 1 TBSP. honey

Chop the sweet potatoes into small cubes and place them into a bowl with the olive oil and salt.
Heat the oven to 375 degrees and pour the potatoes onto a parchment lined large baking sheet. Bake in the oven for 45 minutes. They should be slightly tender.
Heat a large skillet over medium heat and add the yellow onion. Let the onions caramelize.
Finally, pour in the balsamic glaze and honey to the hot skillet. The total time it takes is about 15-20 minutes.
Once the glaze has thickened remove it from the heat and let the hash cool. Serve immediately.
