In a bowl, combine 1 1/2 cup All Purpose Einkorn Flour and 2 tsp. Baking powder. Whisk together.
Add in the 1 cup Small curd cottage cheese.
Mix together until combined- you want the dough to be elastic, but not sticky. Cottage cheese can vary in consistency so you might need to add a little bit more flour- do this 1 tbsp. at a time.
Add in ½ cup simple chocolate chips and mix until evenly distributed throughout the dough
Cover with a light dish towel and let rest 30 minutes.
Preheat oven to 350f
Roll into 6 balls and poke a hole through the middle. Stretch the hole out to create a ring.
Place the rings on a parchment lined baking sheet.
Whisk 1 Egg in a small bowl.
Use the basting brush and brush onto the bagel rings.
Sprinkle with1½ tsp flaky sea salt. You can add more or less depending on how salty you prefer.
Bake at 350f for 12-15 minutes. Until the center is done.

FreezeTo freeze, let cool to room temperature. Place the parchment lined sheet pan with bagels in the freezer for 2 hours. After 2 hours transfer to a freezer safe bag and store up to 2 months.
