I prep these ahead on days when I don’t have a lot of time. They come together SO fast. The combo of melty chocolate chips, flaky sea salt, and a soft, protein-packed bagel hit the spot every time. Bonus — you can prep them ahead, freeze, and reheat in seconds. Perfect for school mornings, post-workout snacks, or a sweet afternoon pick-me-up.

Other Favorite Einkorn Recipes
High Protein Chocolate Chip and Sea Salt Bagels
Equipment
- 1 large bowl
- parchment paper
- 1 small bowl
- 1 baster brush
Ingredients
- 1 1/2 cup All Purpose Einkorn Flour
- 2 tsp. Baking powder
- 1 cup Small curd cottage cheese
- ½ cup simple chocolate chips
- 1 Egg or any other clean version
- 1½ tsp flaky sea salt
Instructions
- In a bowl, combine 1 1/2 cup All Purpose Einkorn Flour and 2 tsp. Baking powder. Whisk together.
- Add in the 1 cup Small curd cottage cheese.
- Mix together until combined- you want the dough to be elastic, but not sticky. Cottage cheese can vary in consistency so you might need to add a little bit more flour- do this 1 tbsp. at a time.
- Add in ½ cup simple chocolate chips and mix until evenly distributed throughout the dough
- Cover with a light dish towel and let rest 30 minutes.
- Preheat oven to 350f
- Roll into 6 balls and poke a hole through the middle. Stretch the hole out to create a ring.
- Place the rings on a parchment lined baking sheet.
- Whisk 1 Egg in a small bowl.
- Use the basting brush and brush onto the bagel rings.
- Sprinkle with1½ tsp flaky sea salt. You can add more or less depending on how salty you prefer.
- Bake at 350f for 12-15 minutes. Until the center is done.

Notes
Storage and Freezer Tips
Store cooled bagels in an airtight container up to 4 days.
To freeze, let cool to room temperature and place on a parchment lined baking sheet. Freeze for two hours and place in a freezer safe Ziploc bag for up to 2 months in the freezer.
Either defrost in the microwave or toast to reheat..
