Mix together 1 tsp pink Himalayan salt, 1 tsp onion powder, 1 tsp Italian seasoning, 1/4 tsp cracked black pepper.
Place the 1 1/2 lb organic chicken breast cubed into a bowl and pour in the seasonings blend. Toss to coat.
In a medium skillet over medium heat pour in the 2 tbsp extra virgin olive oil.
Add in the seasoned chicken. Stir frequently until completely cooked through. about 8-10 minutes.
Remove the chicken. Add in the 1 large shallot chopped and 1 cup orzo. You might need to add in another tbsp. oil. Enough so the orzo and onions will brown. Add in the 1 bunch asparagus.
Stir frequently, once the orzo is slightly browned pour in the 3 1/2 cup organic chicken broth and 1/2 lemon juiced. Stir frequently.
After 5 minutes add the chicken back down. Continue to stir frequently.
Once all of the liquid is absorbed and the orzo is tender remove from heat and serve.
* depending on how your heat runs you might have to add a little bit more liquid.
