One Skillet Lemon Garlic Chicken Orzo

- 1 medium skillet
Ingredients
- 2 tbsp extra virgin olive oil
- 1 1/2 lb organic chicken breast cubed
- 1 tsp pink Himalayan salt
- 1 tsp onion powder
- 1 tsp Italian seasoning
- 1/4 tsp cracked black pepper
- 1 large shallot chopped
- 1 cup orzo
- 3 1/2 cup organic chicken broth
- 1/2 lemon juiced
- 1 bunch asparagus trimmed, cut in half and washed
Instructions
- Mix together 1 tsp pink Himalayan salt, 1 tsp onion powder, 1 tsp Italian seasoning, 1/4 tsp cracked black pepper.
- Place the 1 1/2 lb organic chicken breast cubed into a bowl and pour in the seasonings blend. Toss to coat.
- In a medium skillet over medium heat pour in the 2 tbsp extra virgin olive oil.
- Add in the seasoned chicken. Stir frequently until completely cooked through. about 8-10 minutes.
- Remove the chicken. Add in the 1 large shallot chopped and 1 cup orzo. You might need to add in another tbsp. oil. Enough so the orzo and onions will brown. Add in the 1 bunch asparagus.
- Stir frequently, once the orzo is slightly browned pour in the 3 1/2 cup organic chicken broth and 1/2 lemon juiced. Stir frequently.
- After 5 minutes add the chicken back down. Continue to stir frequently.
- Once all of the liquid is absorbed and the orzo is tender remove from heat and serve.
- * depending on how your heat runs you might have to add a little bit more liquid.
