Preheat the oven to 425℉.
Line a baking sheet with parchment paper.
Combine in a small bowl 1 cup panko bread crumbs, 1 tsp Italian seasoning, 1 cup parmesan, 1 tsp garlic powder, ½ tsp pink Himalayan salt and 1 tsp onion powder.
Combine and mix 1 egg, ½ cup milk and 1 tsp pink Himalayan salt in another bowl.
Set the 2 bowls next to each other.
First place 2 boneless skinless chicken breast (cubed) into the egg mixture.
A few at a time remove the chicken from the egg mixture and place into the panko breading mixture.
Place onto the parchment lined baking sheet.
Spray with olive oil and place into the oven.
Bake at 425℉ for 15 minutes until crispy and the internal temperature reaches 165℉.
