Parmesan Chicken Bites

Ingredients

  • 2 boneless skinless chicken breast (cubed)

Coating

  • 1 cup panko bread crumbs (We like Aleia's brand)
  • 1 tsp Italian seasoning
  • 1 cup parmesan (finely shredded)
  • 1 tsp garlic powder
  • ½ tsp pink Himalayan salt
  • 1 tsp onion powder

Wet Mixture

  • 1 egg
  • ½ cup milk
  • 1 tsp pink Himalayan salt

Instructions

  • Preheat the oven to 425℉.
  • Line a baking sheet with parchment paper.
  • Combine in a small bowl 1 cup panko bread crumbs, 1 tsp Italian seasoning, 1 cup parmesan, 1 tsp garlic powder, ½ tsp pink Himalayan salt and 1 tsp onion powder.
  • Combine and mix 1 egg, ½ cup milk and 1 tsp pink Himalayan salt in another bowl.
  • Set the 2 bowls next to each other.
  • First place 2 boneless skinless chicken breast (cubed) into the egg mixture.
  • A few at a time remove the chicken from the egg mixture and place into the panko breading mixture.
  • Place onto the parchment lined baking sheet.
  • Spray with olive oil and place into the oven.
  • Bake at 425℉ for 15 minutes until crispy and the internal temperature reaches 165℉.

Notes

Freeze Instructions
Before you bake and the bites are on the parchment lined baking sheet, place in the freezer for 2 hours.  After 2 hours place in a freezer safe container or ziploc.  Freeze for up to 2 months. 
Add a few extra minutes on to the cook time if cooking from frozen.
