Slow Cooker Jerk Mango Chicken

Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 1/2 lb organic chicken breast
  • 1 tsp organic brown sugar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 tsp smoked paprika
  • 1/4 tsp ground black pepper
  • 1/4 tsp dried thyme
  • 1 dash all spice
  • 1 dash cinnamon
  • 1 dash cloves
  • 1/2 cup coconut aminos
  • 1 lime juiced
  • 1 tbsp maple syrup
  • 2 tbsp orange juice
  • 1 cup mango cubed
  • 2 small sweet peppers chopped
  • 2 shallots chopped

Instructions

  • In a slow cooker drizzle 2 tbsp extra virgin olive oil. Turn the setting to high.
  • Place the 1 1/2 lb organic chicken breast into the slow cooker.
  • In a small bowl mix together 1 tsp organic brown sugar, 1 tsp garlic powder, 1 tsp onion powder, 1/4 tsp smoked paprika, 1/4 tsp ground black pepper, 1/4 tsp dried thyme, 1 dash all spice, 1 dash cinnamon, 1 dash cloves.
  • Sprinkle half of the seasoning mixture on top of the chicken breast. Flip and sprinkle the other half.
  • Pour in 1/2 cup coconut aminos, 1 lime juiced, 1 tbsp maple syrup, 2 tbsp orange juice, 1 cup mango, 2 small sweet peppers, 2 shallots.
  • Give a stir and place the lid on.
  • Cook oh high for 6 hours.
  • Shred with a wooden spoon.
  • Serve over your favorite rice- enjoy!
