Slow Cooker Jerk Mango Chicken

- 1 slow cooker
Ingredients
- 2 tbsp extra virgin olive oil
- 1 1/2 lb organic chicken breast
- 1 tsp organic brown sugar
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/4 tsp smoked paprika
- 1/4 tsp ground black pepper
- 1/4 tsp dried thyme
- 1 dash all spice
- 1 dash cinnamon
- 1 dash cloves
- 1/2 cup coconut aminos
- 1 lime juiced
- 1 tbsp maple syrup
- 2 tbsp orange juice
- 1 cup mango cubed
- 2 small sweet peppers chopped
- 2 shallots chopped
Instructions
- In a slow cooker drizzle 2 tbsp extra virgin olive oil. Turn the setting to high.
- Place the 1 1/2 lb organic chicken breast into the slow cooker.
- In a small bowl mix together 1 tsp organic brown sugar, 1 tsp garlic powder, 1 tsp onion powder, 1/4 tsp smoked paprika, 1/4 tsp ground black pepper, 1/4 tsp dried thyme, 1 dash all spice, 1 dash cinnamon, 1 dash cloves.
- Sprinkle half of the seasoning mixture on top of the chicken breast. Flip and sprinkle the other half.
- Pour in 1/2 cup coconut aminos, 1 lime juiced, 1 tbsp maple syrup, 2 tbsp orange juice, 1 cup mango, 2 small sweet peppers, 2 shallots.
- Give a stir and place the lid on.
- Cook oh high for 6 hours.
- Shred with a wooden spoon.
- Serve over your favorite rice- enjoy!
