Slow Cooker Loaded Chicken and Broccoli Soup

Equipment

  • 1 slow cooker or all in one cooker

Ingredients

  • 1 tbsp Extra virgin olive oil
  • 2 Chicken breast cubed
  • 1 tsp Arrow root
  • 2 tbsp Einkorn flour
  • 1 cup Whole milk
  • 2 cup Chicken broth
  • 1 tsp Salt
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp  Ground mustard
  • 12 oz Broccoli cuts
  • 2 Carrots grated
  • 1 Onion chopped
  • 3 clove Minced garlic
  • 3 cup Shredded cheddar
  • 1/2 cup Sour cream

Instructions

  • Wipe a a slow cooker with 1 tbsp Extra virgin olive oil.
  • Chop 2 Chicken breast cubed. Sprinkle with 2 tbsp Einkorn flour, 1 tsp Arrow root and stir.
  • Pour in 1 cup Whole milk, 2 cup Chicken broth, add 1 tsp Salt, 1 tsp Garlic powder, 1 tsp Onion powder, 1 tsp  Ground mustard, 12 oz Broccoli cuts, 2 Carrots grated, 1 Onion chopped and 3 clove Minced garlic.
  • Let cook on slow 6-8 hours or high 4 hours.
  • Add in 3 cup Shredded cheddar.
  • Add in 1/2 cup Sour cream.
  • Stir and serve.

Notes

  • Soup is a great meal to make in advance. To freeze, allow to come to room temperature first. Then, pour into a large ball jar or freezer safe container and place on lid.  Freeze up to 2 months. 
  • To thaw, place in the refrigerator the night before you are wanting to use.
