Slow Cooker Loaded Chicken and Broccoli Soup

Slow Cooker Loaded Chicken and Broccoli Soup

Equipment
- 1 slow cooker or all in one cooker
Ingredients
- 1 tbsp Extra virgin olive oil
- 2 Chicken breast cubed
- 1 tsp Arrow root
- 2 tbsp Einkorn flour
- 1 cup Whole milk
- 2 cup Chicken broth
- 1 tsp Salt
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp Ground mustard
- 12 oz Broccoli cuts
- 2 Carrots grated
- 1 Onion chopped
- 3 clove Minced garlic
- 3 cup Shredded cheddar
- 1/2 cup Sour cream
Instructions
- Wipe a a slow cooker with 1 tbsp Extra virgin olive oil.
- Chop 2 Chicken breast cubed. Sprinkle with 2 tbsp Einkorn flour, 1 tsp Arrow root and stir.
- Pour in 1 cup Whole milk, 2 cup Chicken broth, add 1 tsp Salt, 1 tsp Garlic powder, 1 tsp Onion powder, 1 tsp Ground mustard, 12 oz Broccoli cuts, 2 Carrots grated, 1 Onion chopped and 3 clove Minced garlic.
- Let cook on slow 6-8 hours or high 4 hours.
- Add in 3 cup Shredded cheddar.
- Add in 1/2 cup Sour cream.
- Stir and serve.
Notes
- Soup is a great meal to make in advance. To freeze, allow to come to room temperature first. Then, pour into a large ball jar or freezer safe container and place on lid. Freeze up to 2 months.
- To thaw, place in the refrigerator the night before you are wanting to use.
