In a small bowl combine the flour, and salt. Press this mixture onto both sides of the pork chops. If you don't use all of the flour be sure to save it. In a separate small bowl, combine the onion powder, garlic powder and dried thyme.
Warm the slow cooker to 325 f. If you don't have an all in one slow cooker you can simply complete this step in a large skillet over medium-high heat. In your skillet or slow cooker pour in the olive oil and once it is hot add in the flour coated pork chops. Cook for 3-5 minutes on each side until slightly browned. If you complete this step in the slow cooker remove the pork chops. At this point, add in the chopped onion and chicken broth. Then, layer the pork chops on top. If you have and flour left over sprinkle this in. If you used a large skillet, be sure to scrape the pan and add in all the bits.
Sprinkle the pork chops with half of the seasoning mixture that was created in the small bowl. Flip, and do the same thing to the other side of the pork chops. The final step is to add the garlic on top of the pork chops. Place the lid on the crock pot pork chops and let it do the cooking. Cook on low for about 6 hours.
When the pork chops are done, remove them from the slow cooker and let them rest. At this point whisk the gravy that is left in the bottom of the slow cooker. If it isn't thick enough, you can turn the heat to high and let it thicken about 5-10 minutes. The gravy ends up loaded with flavor!
We love to use kettle and fire broth for it's simple yet flavorful ingredients. Broth is one where many companies add in processed ingredients. By checking the labels this is one way to swap to a more preservative free lifestyle.
If you are using thin cut pork chops be cut the time in half.
