Strawberry Waffles

Thick, fluffy einkorn strawberry waffles made with Greek yogurt, whole milk, and 1½ cups of smashed freeze-dried strawberries for concentrated fruit flavor throughout. Einkorn flour adds nuttiness and tenderness. Freeze in a single layer and reheat in the toaster for a crispy exterior that tastes freshly made. Make a double batch on Sunday and breakfast is handled for two weeks.

Ingredients

  • 2 cup all-purpose einkorn flour
  • ½ tsp baking soda
  • 1 tbsp baking powder
  • cup organic whole milk
  • 1 cup organic Greek yogurt
  • cup melted organic butter
  • 2 tsp vanilla
  • 3 large eggs
  • 2 tbsp organic maple syrup
  • cup Freeze dried strawberries smashed up

Instructions

  • In a large bowl, whisk together 2 cup all-purpose einkorn flour, ½ tsp baking soda, 1 tbsp baking powder.
  • Once whisked, add in 1½ cup organic whole milk, 1 cup organic Greek yogurt, ⅓ cup melted organic butter, 2 tsp vanilla, 3 large eggs and 2 tbsp organic maple syrup.
  • Mix together well- it is okay if there are a few clumps. Add in the 1½ cup Freeze dried strawberries.
  • Heat your waffle maker.
  • Pour a heaping ¼ cup of batter onto each waffle slot. Your serving might be different- be sure to check the size for your waffle maker.
  • Close the lid and cook about 6 minutes.
  • Repeat until all of the batter is gone.
  • Serve with your favorite toppings like butter, maple syrup, whipped cream, strawberries.

Notes

Don't overmix. Mix until just combined. A few clumps are fine.
Smash freeze-dried strawberries into irregular pieces before folding in. Pieces, not powder.
Cool on a wire rack rather than stacking to keep the exterior crispy.
Measure einkorn flour by spooning into the cup and leveling off.
Freeze: Cool completely, flash freeze flat 2 hours on a parchment-lined sheet, then bag. Up to 2 months.
Reheat crispy: Toaster, 45 seconds to 1 minute.
Reheat soft: Paper towel, microwave 30 to 45 seconds.
Regular flour substitute: Use 1¾ cups all-purpose flour instead of 2 cups einkorn.
