Pasta with Creamy Tomato Sauce and Bacon

Ingredients

  • 5 piece uncured bacon (chopped small)
  • ½ onion (finely chopped)
  • 3 clove garlic (chopped small)
  • 2 cups broccoli florets (finely chopped)
  • 2 cups creamy tomato sauce (See component recipe)
  • ½ cup cottage cheese
  • ½ cup parmesan (shredded from a block)
  • 3 cups organic chicken broth
  • 2 cups rotini Pasta

Instructions

  • Place a 12 inch cast iron skillet over medium heat.  Sautee the 5 piece uncured bacon chopped, ½ onion diced, 2 cups broccoli florets and 3 clove garlic chopped.  Continue sauteeing until the onions caramelize and the broccoli starts to soften.
  • Add in the 2 cups of 2 cups creamy tomato sauce, 3 cups organic chicken broth and 2 cups rotini Pasta or and other favorite. Let boil until the pasta is done, stirring frequently.  about 15 minutes.
  • Once the pasta is done and the liquid is mostly absorbed add in the ½ cup cottage cheese and sprinkle the ½ cup parmesan on top. Stir until combined.
  • Serve immediately.
