- parchment paper
- 1 small bowl
Ingredients
- 3 cup All Purpose Einkorn Flour
- 4 tsp. Baking powder
- 2 cup Small curd cottage cheese
- Everything but the bagel seasoning
- extra virgin olive oil
- 8 oz. cream cheese cut into 12 squares
Instructions
- Line a baking sheet with parchment paper. Place the 12 squares of cream cheese on the baking sheet. Place in the freezer about 30 minutes- until frozen.
- In a bowl, combine 3 cup All Purpose Einkorn Flour and 4 tsp. Baking powder. Whisk together.
- Add in the 2 cup Small curd cottage cheese.
- Mix together until combined- you want the dough to be elastic, but not sticky. Cottage cheese can vary in consistency so you might need to add a little bit more flour- do this 1 tbsp. at a time.
- Cover with a light dish towel and let rest 30 minutes.
- Roll into 12 balls and flatten.
- Work quickly- place a square of cheese on top of the flattened dough ball. Wrap all sides around and roll in Everything but the bagel seasoning . Place back on the parchment lined baking sheet.
- Sprinkle with everything but the bagel salt.
- spray or drizzle with extra virgin olive oil if baking right away- if not skip this step.
- Either bake right away at 450f for 10-12 minutes until cooked though or Freeze for 2 hours on the parchment lined baking sheet and then place in a freezer safe bag or container.
- From frozen drizzle with extra virgin olive oil and bake for 12-15 minutes.
