Viral Vanilla Cake

Self admitted- I am not usually a baker, but you guys this vanilla cake is DREAMY. I served it for my daughters birthday and had people texting me after about the cake recipe. It is the perfect consistency and if you make my homemade buttercream, it is a winning combination.

Viral Vanilla Cake
Servings: 8
Equipment
- mixer with whisk and paddle attachment
- 2 bowls
- parchment paper
- 9" circular or 8x8 square cake pan
Ingredients
- spray extra virgin olive oil or avocado oil
- 1 3/4 cup all purpose einkorn flour
- 1 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/2 tsp. pink himalayan salt
- 3 egg whites
- 3/4 cup organic cane sugar
- 1/4 cup butter melted
- 1/2 cup Greek yogurt
- 1/4 cup whole milk
- 1 tbsp. vanilla bean paste
Instructions
- Preheat the oven to 350f.
- Line the cake pan with parchment paper and spray with spray extra virgin olive oil or avocado oil.
- In a bowl add in 1 3/4 cup all purpose einkorn flour, 1 1/2 tsp. baking powder, 1/4 tsp. baking soda, 1/2 tsp. pink himalayan salt.
- In another bowl, add in 3 egg whites Whisk together about 1 minute until the egg whites turn foamy.
- Add in the 3/4 cup organic cane sugar and whisk another 30 seconds.
- Add in 1/4 cup butter melted, 1/2 cup Greek yogurt, 1/4 cup whole milk and 1 tbsp. vanilla bean paste.
- Whisk together about 1 minute until combined.
- Slowly add in the flour mixture to the wet mixture. Add it in 1/3's untilcombined- but do not over beat.
- Pour into the prepared cake pan and bake 25-30 minutes.
- Start checking 5 minutes early because oven temperatures can vary.
Notes
- If all you have is all purpose flour, reduce the flour by 1/4 cup per cup of flour used.
- You can swap vanilla bean paste for vanilla extract
