Almond Poppy Seed Muffins

There is something about these Almond Poppy Seed Muffins that takes me right back to the 80s- standing in my mom’s kitchen while she made a batch out of boxed cake mix, the whole house smelling sweet and cozy. This version?  A much healthier twist on the nostalgic treat, but still soft, fluffy, and full of almond flavor. The best part?  These are protein-packed, made with clean ingredients, and made for busy mom meal prep. I love that my kids get a sweet treat, and I feel a little better knowing they are starting their day off with some protein… and they don’t even realize it!
