Crock Pot Chicken and Broccoli Soup

  • 1 crock pot

Ingredients

  • 1 tbso. extra virgin olive oil
  • 2 chicken breast cubed
  • 1 tsp. arrow root
  • 2 tbsp. einkorn flour
  • 1 cup whole milk
  • 2 cup chicken broth
  • 1 tsp. salt
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. ground mustard
  • 12 oz. broccoli cuts
  • 2 carrots grated
  • 1 onion chopped
  • 3 cloves minced garlic
  • 3 cups shredded cheddar
  • 1/2 cup sour cream

Instructions

  • Spray or wipe a a slow cooker with 1 tbsp. extra virgin olive oil.
  • Chop 2 chicken breast into small cubes. Sprinkle with 2 tbsp. einkorn flour, arrow root and stir.
  • Pour in 1 cup whole milk, 2 cups chicken broth, add in 1 tsp. salt, 1 tsp. garlic powder, 1 tsp. onion powder, 1 tsp. ground mustard, 12 oz. broccoli cuts, 2 carrots chopped, 1 onion chopped and 3 cloves minced garlic.
  • Let cook on slow 6-8 hours or high 4 hours.
  • Add in 3 cups shredded cheddar.
  • Add in 1/2 cup of sour cream.
  • Stir and serve.
