Crock Pot Chicken and Broccoli Soup

Crock Pot Chicken and Broccoli
Equipment
- 1 crock pot
Ingredients
- 1 tbso. extra virgin olive oil
- 2 chicken breast cubed
- 1 tsp. arrow root
- 2 tbsp. einkorn flour
- 1 cup whole milk
- 2 cup chicken broth
- 1 tsp. salt
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 tsp. ground mustard
- 12 oz. broccoli cuts
- 2 carrots grated
- 1 onion chopped
- 3 cloves minced garlic
- 3 cups shredded cheddar
- 1/2 cup sour cream
Instructions
- Spray or wipe a a slow cooker with 1 tbsp. extra virgin olive oil.
- Chop 2 chicken breast into small cubes. Sprinkle with 2 tbsp. einkorn flour, arrow root and stir.
- Pour in 1 cup whole milk, 2 cups chicken broth, add in 1 tsp. salt, 1 tsp. garlic powder, 1 tsp. onion powder, 1 tsp. ground mustard, 12 oz. broccoli cuts, 2 carrots chopped, 1 onion chopped and 3 cloves minced garlic.
- Let cook on slow 6-8 hours or high 4 hours.
- Add in 3 cups shredded cheddar.
- Add in 1/2 cup of sour cream.
- Stir and serve.
