Hearty Chicken Noodle Soup

This Hearty Chicken Noodle Soup is one of those recipes I make year after year. It’s the go-to in our house when someone is sick or we just feel like something comforting on a freezing cold day! This soup is made with simple, preservative-free ingredients, comes together in one pot, and tastes like something that simmered all day — even when it didn’t. (Unless you use the slow cooker of course).  I included the recipe both ways so you can decide which one fits into your day best.

What makes this chicken noodle soup different is the chicken stays tender, the vegetables soften without turning mushy, and the broth is flavorful without needing anything fancy thanks to the dash of lemon juice. It’s the kind of soup my kids will actually eat without picking around the bowl, which means it gets put into rotation at our house. I also love that it works just as well on the stovetop as it does in an all-in-one cooker or slow cooker, depending on how much time I have that day.

This is a recipe I often prep earlier in the day or even earlier in the week. I’ll chop the vegetables and chicken in the morning, store everything in the fridge, and then all I have to do at dinner time is dump, simmer, and stir. On especially busy weeks, I cook the soup right up until the point where the pasta gets added, let it cool, and freeze it. That way, when we need a fast, nourishing meal, I can reheat the soup, add the noodles, and dinner is ready without starting from scratch.

Hearty Chicken Noodle Soup

Equipment

  • 1 Dutch oven You can use an all-in-one cooker too

Ingredients

  • 2 tbsp extra virgin olive oil
  • 2 lb Boneless skinless chicken breast (chop into cubes)
  • 1 Onion (Chopped)
  • 2 Carrot (peeled and chopped)
  • 2 Celery sticks (peeled and chopped finely)
  • 1 tsp Italian seasoning
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • 1 tsp Pink Himalayan salt
  • 2 Whole garlic cloves (Pressed)
  • 40 oz Chicken broth
  • 1 tbsp Lemon juice (fresh pressed)
  • 8 oz Pasta wide noodle egg or pappardelle broken up.

Instructions

  • Drizzle 2 tbsp extra virgin olive oil into a Dutch oven or all-in-one cooker over medium heat.
  • In a pan toss in 2 lb Boneless skinless chicken breast, 1 Onion chopped, 2 Celery sticks chopped, and 2 Carrot chopped. Sauté until the onions are lucid.
  • Add in the seasonings- 1 tsp Italian seasoning, 1/2 tsp Celery salt, 1/4 tsp Ground sage, 1/4 tsp Dried thyme, 1/2 tsp Oregano,1 tsp Pink Himalayan salt, 2 Whole garlic cloves minced, 1 tsp Garlic powder and 1 tsp Onion powder. Stir until coated.
  • Add in the 40 oz Chicken broth.
  • Add in the 1 tbsp Lemon juice. Simmer for 35-40 minutes until carrots and celery are cooked through. 10 minutes before serving add in the 8 oz Pasta.

All-In-One Slow Cooker Instructions

  • In a slow cooker, add in 2 lb Boneless skinless chicken breast, 1 Onion chopped, 2 Carrot chopped, 2 Celery sticks chopped. Sautee until the onions are lucid.
  • Add in 1 tsp Italian seasoning, 1 tsp Onion powder, 1 tsp Garlic powder, 1 tsp Pink Himalayan salt, 2 Whole garlic cloves. Stir well.
  • Pour in 40 oz Chicken broth and 1 tbsp Lemon juice.
  • Turn the heat to slow cook- high for 4 hours or low for 8 hours.
  • 20 minutes before serving make sure the heat setting is turned to high (if it was on low) if you cooked on high keep it there. Add in the 8 oz Pasta.

Notes

Cook until the step before adding the pasta. Let cool until room temperature and then freeze in a freezer safe container. Thaw in a pan and once boiling add in the pasta and cook until the pasta is done.

Storage & Freezer Tips

  • Best freezer method: Stop cooking before adding pasta.
  • Let soup cool completely, then store in freezer-safe containers or silicone freezer trays.
  • Freeze up to 3 months.
  • Reheat on the stovetop and add fresh pasta once soup is simmering.

Substitutions & Variations

  • Swap chicken breast for chicken thighs for richer flavor
  • Use gluten-free pasta or rice for allergies
  • Add fresh parsley or dill for extra brightness
  • Stir in spinach or kale during the last 5 minutes
