Loaded Baked Potato Soup

This cheesy ham and potato soup is a favorite in our house. Creamy, hearty and loaded with vegetables. I made a big batch before one of our cross country meets, scooped it into thermoses and it was the perfect fuel for the kids after a long run. It’s one of those dinners that is cozy and filling, but is still easy to pull together in the slow cooker. Plus, the combination of ham, potatoes, broccoli and sharp cheddar makes everyone happy on the ride home.

Loaded Baked Potato Soup

Equipment

  • 1 all in one slow cooker

Ingredients

  • ¼ cup organic butter
  • 1 organic onion diced
  • 2 organic carrots peeled and chopped
  • 6 potatoes peeled and cubed
  • 3 cups uncured ham steak cubed
  • 5 organic garlic cloves chopped
  • 3 tsp M Salt or any blend of garlic, pepper, salt
  • 1 tsp organic garlic powder
  • 1 tsp organic onion powder
  • 1 tsp celery flakes
  • ¼ cup all-purpose einkorn flour regular all-purpose if that is what you have on hand
  • 2 cup organic whole milk
  • 32 oz organic chicken broth
  • 10 oz organic frozen broccoli florets
  • ½ cup sour cream
  • 3 cups grated sharp cheddar cheese
  • 6 strips uncured bacon chopped and cooked
  • green onions as wanted

Instructions

  • In an all-in-one slow cooker turn the function to sear at 350℉ if it gives you a heat option.
  • Add in the ¼ cup organic butter and melt.
  • Add in , 1 organic onion diced, 2 organic carrots, chopped, 6 potatoes peeled and cubed, 3 cups uncured ham steak, 5 organic garlic cloves , 3 tsp M Salt, 1 tsp organic garlic powder, 1 tsp organic onion powder, 1 tsp celery flakes.
  • Cook until vegetables are softened- about 10 minutes stirring frequently.
  • Add in ¼ cup all-purpose einkorn flour. Stir until everything is coated. Cook about 3 minutes.
  • Add in 2 cup organic whole milk and stir frequently for the next 5-10 minutes until it thickens a bit.
  • Add in 32 oz organic chicken broth and 10 oz organic frozen broccoli florets.
  • Turn the slow cooker to slow cook and high. Place the lid on and let cook 4hours.
  • Right before you serve, add in 3 cups grated sharp cheddar cheese and ½ cup sour cream. Stir until mixed through.
  • Top with desired amount of bacon and green onions, you can also add more cheese on top if you would like.

Storage and Freezer Tips

Refrigerator: Store leftovers in an airtight glass container up to 3 days.

Freezer: Cool completely, portion into souper cubes or freezer safe containers. Freeze up to 2 months.  To thaw, place in the refrigerator the night before.  Reheat on the stove top in a sauce pan or in the microwave.

Substitutions and Variations

Protein: Swap ham for leftover chicken or turkey.

Vegetables: You can swap for fresh broccoli, or green beans instead.

Gluten Free: Make it gluten free by skipping the flour and using a corn starch flurry instead.

Spice: Add some spice with smoked chipotle or red pepper flakes.  You can also add in some hot sauce.
