This slow cooker Sausage and Potato Soup is one of those dinners that makes life easier on busy nights. The smoked sausage adds just the right flavor, the potatoes make it filling, and it’s the kind of meal my whole family eats without complaints. I love tossing everything in the slow cooker earlier in the day so it’s ready when we get home from sports or school activities.

Ingredients
- 2 tbsp extra virgin olive oil
- 6 potatoes washed, peeled and chopped
- 1 organic yellow onion diced
- 3 organic carrots peeled and chopped
- 1 organic celery rib washed and chopped
- 2 garlic cloves pressed
- 12 oz uncured pork smoked sausage
- 3 tsp M Salt or any salt, garlic powder, black pepper blend
- 1 tsp organic onion powder
- 10.5 oz organic cream of celery soup
- 64 oz organic chicken broth
- ½ cup heavy cream
Instructions
- Turn the all-in-one slow cooker to sear. Add in the 2 tbsp extra virgin olive oil, 6 potatoes cubed, 1 organic yellow onion diced, 3 organic carrots diced, 1 organic celery rib diced, 2 garlic cloves pressed, 12 oz uncured pork smoked sausage, 3 tsp M Salt and 1 tsp organic onion powder.
- Stir every few minutes for about 10 minutes until the onions are lucid.
- Add in 10.5 oz organic cream of celery soup, 64 oz organic chicken broth ½ cup heavy cream.
- Stir and turn the heat to slow cook high. Cook for 4 hours.
- Spoon into bowls and serve with your favorite bread.
Storage and Freezer Tips
Refrigerator: Store leftovers in an airtight container up to 3 days.
Freezer: Cool Completely, then portion into souper cubes or a freezer safe container. Reheat in a pan on the stove top or in the microwave.
