Mini Einkorn Flour Pizzas

We love homemade pizza, but sometimes it takes to much effort to make on Friday nights. Make these mini einkorn flour pizzas ahead of time and still get your Friday night pizza fix without the effort!
Homemade Mini Pizzas
Equipment
- 1 large mixing bowl
- 1 large baking sheet
- parchment paper
Ingredients
- 2 cup all purpose einkorn flour
- 1 tbsp extra virgin olive oil
- 1 tbsp organic honey
- 1 cup warm water between 100-110 f
- ¾ tsp pink Himalayan salt
- 1½ tsp dry yeast
- ¼ all purpose einkorn flour (for rolling out the dough)
Toppings
- 1 jar organic pizza sauce
- 8 oz mozzarella cheese grated
- 8 oz Monterrey jack cheese grated
- pepperoni, ham, sausage, veggies
Instructions
Dough
- In a large mixing bowl, combine 1 tbsp extra virgin olive oil, 1 tbsp organic honey, 1 cup warm water, 1½ tsp dry yeast. Whisk and let rest 5-10 minutes until it starts to bubble. Be sure the water is between 100-110 f. This is what helps activate the yeast.
- Once bubbly, add in the 2 cup all purpose einkorn flour and ¾ tsp pink Himalayan salt. Stir with a wooden spoon just until combined. You don't want to overmix einkorn flour.
- Cover with a tea towel in a warm area about an hour until dough has almost doubled.
- Flour the countertop surface and pour the dough onto the floured surface. Sprinkle with ¼ all purpose einkorn flour Cover your hands in flour before working with the dough. You might need a little more flour.
- Knead a few times- adding flour to your hands as needed. Don't overwork the dough. You don't want to knead like you do a normal pizza dough.
- split into 4 balls.
- Place parchment paper on a baking sheet and lightly grease.
- Press out the balls of dough into 4 circles on the parchment lined baking sheet.
- Press out the balls of dough onto the parchment paper to make 4 circles.
- Top with your favorite toppings and bake about 12-15 minutes until the crust is a light golden brown and the center is cooked through.
- Add 2-3 tbsp from the 1 jar organic pizza sauce onto each circle and spread evenly.
- Sprinkle on 8 oz mozzarella cheese and 8 oz Monterrey jack cheese evenly dispersed on the 4 pizzas. Add on your favorite toppings such as pepperoni, ham, sausage, veggies.
- Place in the freezer for 2 hours.
- Remove and wrap each pizza in parchment paper and then place in a freezer safe Ziploc bag. Place in the freezer for up to 2 months.
- To reheat, heat the air fryer to 400℉. You can also heat the oven to 425℉ and place the pizza on a parchment lined baking sheet.
- Heat the pizza for about 12 minutes it might need up to 15.
Notes
Einkorn flour is more delicate in pizza dough than normal flour. The trick is to not over knead the dough. You don't want to work the flour all the way through when kneading.
