Apple Cinnamon Breakfast Bites

Equipment

  • 1 medium bowl
  • 1 muffin tin

Ingredients

  • cup organic rolled oats
  • ½ cup organic ripe banana mashed
  • ¼ cup peanut butter
  • tsp cinnamon
  • ½ tsp allspice
  • ½ tsp pink Himalayan salt or sea salt
  • ½ cup organic honey crisp apples finely chopped
  • 2 tbsp organic chia seeds
  • 1 organic egg

Instructions

  • Preheat the oven to 350℉
  • In a bowl mash ½ cup organic ripe banana.
  • Add in ¼ cup peanut butter, 1½ tsp cinnamon, ½ tsp allspice, ½ tsp pink Himalayan salt, ½ cup organic honey crisp apples, 2 tbsp organic chia seeds and 1 organic egg. Mix until well combined.
  • Add in 1½ cup organic rolled oats and mix again well with a wooden spoon.
  • Lightly grease the muffin tin (if using non stick don't use a spray).
  • Scoop about 1½ tbsp. mix into each muffin tin and spread out.
  • Bake about 15 minutes until.
  • Remove and let cook before serving.

Notes

To freeze, Remove from muffin tins and place on a parchment lined baking sheet. Place in the freezer for 2 hours.  Remove and place in a freezer safe Ziploc bag.  Freezer for up to 2 months.
