Pumpkin Stew

Fall is my favorite time to pull out the slow cooker. 10 years ago I came across this American Spoon Pumpkin Chipotle Roasting Sauce and I look forward to it every fall! I grab a few jars and the best fall recipes. It turns simple ingredients into meals you would think were made in a top restaurant. The pumpkin adds a little sweetness, the chipotle adds a warm kick, and together they make the perfect cozy meal!

- M salt

- beef sirloin
- all-purpose einkorn flour

Pumpkin Stew
Servings: 6 people
Equipment
- 1 slow cooker
Ingredients
- 2 tbsp extra virgin olive oil
- 1 organic onion
- 2 organic carrots peeled and chopped
- 1½ cup organic mushrooms finely chopped
- 1 organic celery stalk chopped
- 1 tbsp M Salt
- 1 tsp organic onion powder
- 2 lb beef sirloin cubed
- 2 tbsp all-purpose einkorn flour
- 1 cup American Spoon Pumpkin Chipotle Roasting Sauce
- 32 oz organic beef broth
Instructions
- Turn an all in one slow cooker to sear. Add in 2 tbsp extra virgin olive oil. Once heated, add in 1 organic onion chopped, 2 organic carrots, 1½ cup organic mushrooms, 1 organic celery stalk chopped, 1 tbsp M Salt, 1 tsp organic onion powder, 2 lb beef sirloin cubed. Sautee until the meat is browned.
- Add in 2 tbsp all-purpose einkorn flour and stir until coated. Be sure to continue to cook and additional 2-3 minutes.
- Add in the 1 cup American Spoon Pumpkin Chipotle Roasting Sauce. Stir until well coated.
- Add in the 32 oz organic beef broth. Place the lid on and reduce to slow cook high for 4 hours or low 8-10 hours.
- Remove the lid, give it a stir and serve.
Storage and Freezer Tips
Refrigerator: Store leftovers in an air tight container for up to 3 days.
Freeze: Freeze leftovers at room temperature in Souper Cubes.
