Breakfast Zucchini and Sausage Fritters
Breakfast Zucchini and Sausage Fritters are the breakfast you need when you are craving the junk breakfast, but want it healthier. Think of this as your favorite fast food hash browns mixed with the savory sausage. A quick and easy breakfast that is also filling. Wre even tossed in some vegetables to balance it out.
Breakfast Zucchini and Sausage Fritters
Servings: 8
Ingredients
- 1 Egg
- 1 Zucchini (washed and shredded)
- 2 cup Shredded frozen potatoes (check the label and be sure it is just potatoes)
- 2 tbsp Einkorn flour
- 1 lb Breakfast sausage (be sure to get the naturally- it is preservative free)
Instructions
- Place the egg, zucchini, potatoes, flour and breakfast sausage in a bowl.
- Roll into 8 balls and smoosh to about 1/2 inch thick.
- Line a baking sheet with parchment paper.
- Bake at 375 f for 20-25 minutes until the sausage is cooked through. Be sure to flip at the half way mark.

Reheat
- Either place in the microwave for 40 seconds or place in the air fryer or oven for 8-10 minutes on 350 f.
