Cacio e Pepe

A quick and easy pasta was cheese, salt and pepper

Equipment

  • 1 medium sauce pan

Ingredients

  • 8 oz. Goodles Spirals
  • 2 tbsp butter
  • 1 1/2 tsp salt
  • 3/4 cup grated parmesan cheese shredded from a block
  • 1/4 cup pecorino cheese shredded from a block
  • 1 tsp. ground black pepper
  • Reserve 1/4 cup of water from pasta before draining

Instructions

  • Cook the Goodles according to the package, but add 1 1/2 tsp. of salt to the water.
  • Reserve 1/4 cup of water before you drain the pasta.
  • While the pasta is cooking, shred the parmesan and pecorino cheese.
  • Once you drain the pasta, add back into the sauce pan.
  • Pour in the reserved water, 3/4 cup parmesan cheese, 1/4 cup pecornino cheese and 1 tsp. pepper.
  • Stir until well mixed.
  • Serve immediately.

Notes

You can add extra salt at the end if needed.
