Chicken and Tortellini Soup
We love adding a healthier version of tortellini into our soup. With ground chicken and lots of vegetables, this fills you up with all of the good stuff. Perfect for a busy weeknight or evening you want to get cozy. I find soups are one of the easiest ways to add in some extra vegetables.

Chicken and Tortellini Soup

Equipment
- 1 Dutch oven
Ingredients
- 1 tbsp Olive oil
- 1 Onion chopped
- 2 Carrots chopped
- 2 Zucchini chopped
- 1 lb Organic ground chicken
- 1 tsp Onion powder
- 1 tsp Garlic powder
- 1 tsp Italian seasoning
- 1 tsp Salt
- 32 oz Chicken broth
- 15 oz Tomato sauce
- 18 oz Tortellini
Instructions
- In a large pan, add extra virgin olive oil, onion, carrots chopped, zucchini chopped and ground chicken.
- After 5 minutes add in onion powder, garlic powder, Italian seasoning and salt, . Sautee until chicken is cooked through and onions, carrots and zucchini are soft.
- Add in chicken broth, tomato sauce and tortellini. Cook 15 -20 minutes until the tortellini is cooked through.
- Serve in a bowl.
