Chicken and Tortellini Soup

We love adding a healthier version of tortellini into our soup. With ground chicken and lots of vegetables, this fills you up with all of the good stuff. Perfect for a busy weeknight or evening you want to get cozy.  I find soups are one of the easiest ways to add in some extra vegetables.

Chicken and Tortellini Soup

Equipment

  • 1 Dutch oven

Ingredients

  • 1 tbsp Olive oil
  • 1 Onion chopped
  • 2 Carrots chopped
  • 2 Zucchini chopped
  • 1 lb Organic ground chicken
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • 1 tsp Italian seasoning
  • 1 tsp Salt
  • 32 oz Chicken broth
  • 15 oz Tomato sauce
  • 18 oz Tortellini

Instructions

  • In a large pan, add extra virgin olive oil, onion, carrots chopped, zucchini chopped and ground chicken.
  • After 5 minutes add in onion powder, garlic powder, Italian seasoning and salt, . Sautee until chicken is cooked through and onions, carrots and zucchini are soft.
  • Add in chicken broth, tomato sauce and tortellini. Cook 15 -20 minutes until the tortellini is cooked through.
  • Serve in a bowl.
