Chicken Pizza

If your kids love pizza but you’re trying to keep dinner simple and protein-packed, this one’s a winner. This skillet-style chicken pizza comes together in under 30 minutes with just a handful of pantry staples — no crust, no stress. Seasoned chicken breast, melty cheese, and pizza sauce make it feel like a treat (but it’s secretly a weeknight lifesaver). Bonus: fewer dishes and picky-eater approved.
Chicken Pizza
Servings: 4 people
Equipment
- 1 large skillet
- 1 small dish for mixing spices
- 1 meat pounder
- parchment paper optional
Ingredients
- 2 tbsp extra virgin olive oil
- 1½ lb organic chicken breast
- 1 tsp pink Himalayan salt or sea salt
- 1 tsp organic garlic powder
- 1 tsp organic Italian seasoning
- ½ tsp organic onion powder
- 1½ cup organic pizza sauce
- 3 oz Monterrey jack cheese cut into 6 slices
- 3 oz mozzarella cheese cut into 6 slices
Instructions
- In between 2 pieces of parchment paper, using the meat pounder, pound the 1½ lb organic chicken breast out so that they are an even thickness.
- Sprinkle the mixed seasonings onto the chicken breast covering both sides.
- Mix together in a small dish 1 tsp pink Himalayan salt, 1 tsp organic garlic powder, 1 tsp organic Italian seasoning and ½ tsp organic onion powder.
- Heat a skillet on the stove top over medium. Pour in the 2 tbsp extra virgin olive oil.
- Place the chicken into the skillet in a single layer.
- Let cook about 3 minutes. Flip.
- Let cook 2 minutes.
- Pour the 1½ cup organic pizza sauce onto each of the chicken breast. Evenly distributing on each chicken breast.
- On top of the sauce, on each chicken breast place 2 slices of the 3 oz Monterrey jack cheese and 2 slices of the 3 oz mozzarella cheese if you have 3 chicken breast. If you only have 2, do 3 slices of Monterrey jack cheese and 3 slices of mozzarella cheese on each.
- Place a lid on or cover with foil and cook another 5 minutes until the cheese is melted.
- Serve with your favorite sides- we love serving with garlic bread and a vegetable. You could also serve with pasta.
Notes
Prep ahead- You can prep the chicken breast ahead with the seasoning the morning of or even season and then freeze.
If you freeze, place in the refrigerator the night before you are going to use to thaw out. Then, continue on with the recipe.
