Greek Yogurt Waffles (High Protein, Fluffy & Easy)

If breakfast feels like the most chaotic part of your day, you’re not alone. It’s the one meal that somehow needs to be fast, filling, and ready before anyone is fully awake — which doesn’t always leave a lot of room for actual cooking.

These Greek Yogurt Waffles are one of my favorite ways to get protein into my kids easily and without much thought.  One of their favorite breakfasts is waffles so I started experimenting with Greek yogurt and Einkorn flour.

They turned out better than I expected, and now they’ve become part of our regular breakfast rotation.

The texture is exactly what I want in a waffle — soft in the center with lightly crisp edges — but what really makes them work for our house is how filling they are. The Greek yogurt adds a little extra protein, which helps keep everyone full longer. I’ve learned the hard way that if breakfast isn’t substantial enough, I’m getting snack requests before we’ve even started the day.

The batter comes together quickly in one bowl, which matters more than I’d like to admit. Fewer steps means I’m actually more likely to make it again. There’s no separating eggs or extra prep — just mix everything together and pour it into the waffle maker.

I also almost always make extra. These freeze really well, and having them ready to go during the week makes mornings feel a lot less rushed. I’ll pull a couple out, toss them in the toaster, and breakfast is done without thinking about it.

You can keep them simple with butter and maple syrup, or add chocolate chips or fruit if you want to switch things up. Either way, they’re easy, reliable, and something my kids will actually eat without complaining — which, honestly, is half the battle.

Greek Yogurt Waffles

Equipment

  • 1 waffle maker
  • 1 large bowl
  • ¼ cup measure

Ingredients

  • 2 cup all-purpose einkorn flour
  • ½ tsp baking soda
  • 1 tbsp baking powder
  • cup organic whole milk
  • 1 cup organic Greek yogurt
  • cup melted organic butter
  • 2 tsp vanilla
  • 3 large eggs
  • 2 tbsp organic maple syrup

Instructions

  • In a large bowl, whisk together 2 cup all-purpose einkorn flour, ½ tsp baking soda, 1 tbsp baking powder.
  • Once whisked, add in 1½ cup organic whole milk, 1 cup organic Greek yogurt, ⅓ cup melted organic butter, 2 tsp vanilla, 3 large eggs and 2 tbsp organic maple syrup.
  • Mix together well- it is okay if there are a few clumps.
  • Heat your waffle maker.
  • Pour a heaping ¼ cup of batter onto each waffle slot. Your serving might be different- be sure to check the size for your waffle maker.
  • Close the lid and cook about 6 minutes.
  • Repeat until all of the batter is gone.
  • Serve with your favorite toppings like butter, maple syrup, whipped cream, strawberries.

Notes

Freeze- Lay the waffles on a single layer on a parchment lined baking sheet.  Freeze for 2 hours.  Remove and place in a freezer safe Ziploc or container.  Freeze for up to 2 months. 
To reheat- there are 2 methods. 
1. For crispy outer waffles. Place in a toaster and toast 45 seconds to 1 minute depending on the heat of your toaster. 
2. For soft waffles. Wrap in paper towel and microwave 30-45 seconds. 
 

Storage and Freezer Tips

Fridge: Store leftovers in an airtight container for 3-4 days.

Freezer: Freeze in a single layer on a baking sheet, then transfer to a reusable Stasher bags or my favorite Souper Cubes Freezer trays for up to 3 months. Just pop into the toaster or air fryer to reheat-crispy edges, fluffy centers every time.

Substitutions & Variations

Swap: Swap the Greek yogurt for cottage cheese if that’s what you have.

Add Ons: Add in mini chips or blueberries for a kid-approved twist

Fun Twist: Add pumpkin puree or Pumpkin Spice

Dairy Free: Swap the Greek Yogurt for coconut yogurt and swap the milk for Oat Milk or Almond Milk.  You can also swap butter for Avocado oil. Coconut yogurt can be a little bit thinner so you might need to add 1-2 extra tablespoons of einkorn flour for the right consistency.
